1. Prepare the Pie Crust

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Add the cold and cubed unsalted butter. Using a pastry cutter or your fingers, incorporate the butter until the mixture resembles coarse crumbs.

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half and shape each half into a disc. Wrap them in plastic wrap and refrigerate for at least 30 minutes.

2. Roll Out the Dough

Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out one disc of dough into a 12-inch circle. Carefully transfer the rolled-out dough to a 9-inch pie plate, pressing it gently into the bottom and sides. Trim any excess dough hanging over the edges.

3. Prepare the Filling

If using apples, mix the sliced apples with granulated sugar, all-purpose flour, ground cinnamon, ground nutmeg, ground cloves, salt, and lemon juice in a large bowl. If using pumpkin puree, simply combine it with the same granulated sugar, all-purpose flour, ground cinnamon, ground nutmeg, ground cloves, and salt.

4. Assemble the Pie

Pour the prepared filling into the prepared pie crust. Dot the top of the filling with the melted unsalted butter, distributing it evenly.

5. Add the Top Crust (Optional)

If desired, roll out the second disc of dough and create a lattice or simply place the entire disc over the filling, sealing the edges by crimping with a fork or your fingers. Alternatively, you can leave the pie open-faced.

6. Bake to Golden Perfection

Place the pie on a baking sheet to catch any drips, and then bake in the preheated oven for about 45-55 minutes, or until the crust is golden brown and the filling is bubbling. If the edges of the crust start to brown too quickly, cover them with aluminum foil to prevent burning.

7. Serve and Enjoy

Allow the pie to cool on a wire rack for at least an hour before serving. Serve it plain or with a dollop of whipped cream or a scoop of vanilla ice cream for an extra special touch.
